there's always tomorrow

I'm a list girl.
Before I go to bed, I always make a list of things I need to do for the next day.
Friday night, I made my list, which consisted of nonstop studying.
Saturday morning, I woke up, opened the blinds, and the sun was just way too pretty to pass up.
So I threw out my list, got dressed, and had a me day.
Because I can! & I know one day I won't be able to just get up and go when I please, one day there just may be little ones. [not for a long time though, so no worries mom! I have plenty of 'me days' ahead] 
Naturally the first thing I wanted to do on my 'me day' was eat! Go figure! So I treated myself to lunch at Whole Foods.
 This sandwhich was the perfect combination of sweet honey turkey melt with a soft doughy salty bread to hold it all together. 
Oh yea, did I mention dessert isn't just for after dinner?
 
After eating half of my sandwhich I decided to save the rest for later
 Wish I could say the same for my jumble cookie. I tore my cookie in half, in hopes of having a treat for later.. but somehow the cookie monster got a hold of me, and the cookie was no more.

 I then decided to take myself to Anthropologie because hey, it was a beautiful day and I had nothing holding me back!
Here are some of my fav finds!
 This is probably the best smelling candle/spray ever! & I am not just saying that because my last name is Santiago!
 & I picked up this book that my mom 'needed' to have.  Gosh I'm a sweet daughter. 
They always decorate the store so cool.
Upon leaving my fab day at Bakery Square, this bunny was waiting for me looking oh so sad.  If only I would have saved half of my cookie, I'm sure that would have cheered him up!
I ended the gorgeous day with a run and was tempted to bring my camera along for some pictures of the pretty blooming trails, but decided to simply just run.

Sometimes it's good to just have a simple kind of day and enjoy everything around you. Because the way I see it, there's always tomorrow.

Calories, Shmalories

I dont know how many calories were in my breakfast, and
I would rather not know.
Because honestly, nothing is better than chocolate for breakfast
And I might as well take advantage of my metabolism now.. right?  I mean it's not like I eat this for breakfast everyday...
 
Within ten minutes of ordering and patiently waiting, two crepe like creations straight from heaven appeared in front of me. The pancakes were very thin and buttery with crisp edges filled with bananas, slowly melting chocolate chips and whipped cream.  Yes, I ate them both.  No, I'm not ashamed.  And for the record, these pictures almost didn't make it, my eyes almost inhaled the plate as they were placed on the table.
 


 If you ever are in Pittsburgh, you know where you should be.  Don't deny yourself. You only live once, and whats a little bit of buttery chocolate wonder every now and then?! ; )

What a weekend

I dont know where the time went, but it is already Sunday and
its the first day of SPRING.

I feel like I did everything I could have possibly done this weekend, so in a sense I'm kind of glad it's almost over and I can take the time to just sit in bed today and do homework. 
Gasp, yes, I did just say I am so excited to be sitting in my bed blogging and doing homework.
My body just needs some R&R right about  now..

Because this weekend I:

Volunteered at the Boys & Girls Club and got chased all around, it was the best time ever
Played a fierce game of ping pong
 Helped clean up trash on Saturday morning off of Oakland Ave
Had my first formal of the year.
 Danced the night away with my big
& to top it off
We went fundraising for Delta Sigma Pi this morning
(Obviously doing the 'Dougy' and 'Stanky Leg' in the middle of the street is the best way to get people to give up their ones)
As you can tell, I am so happy with my life right now.
Celebrate we will.
Because life is short but sweet for certain.

Want vs. Need

I Want:
To eat flaky, crunchy, seasoned chips like these for lunch, every day
 To have a taco truck that goes through my neighborhood and brings me yummy pulled pork tacos just like 'The Zeda' at Cali Burrito
I want to be able to take a nap whenever I want, like my precious cat Logan. I am very sleepy right about now and its only 5:30 .. sigh
 
I want to look like this when casually strolling around wearing a black tank top. Gosh she's ugly ; )


I need to:
Stop eating these addicting dark chocolate chip cookies my mom sent back to Pitt with me!
 They are dangerous, I highly recommend you try them (she got them from Wegmans), but after having one, I advise you to hide them, because if you are anything like me, you will have eaten one five before dinner
and I need to have my 10 page marketing paper write itself
I'm not sure what it's waiting for, but it knows its due tomorrow morning at 8am...
 
 You know what they say, if you want something done right.. you got to do it yourself.

WARNING

This recipe is not:
low calorie
healthy
good for your waistline
nor will it help you get into that bikini
But it is:
DELICIOUS
"dreamy, delightful & heavenly" -mom
rich
chocolately
divine
addicting
perfect with cold milk
fudgy
chewy
crispy on top
easy to make
pretty much the only brownie recipe you will ever need
perfect to win over any guy, or just to keep all to yourself  ; )
nonstick vegetable oil spray
10 tablespoons (1 1/4 sticks) unsalted butter, cut into 1-inch pieces
1 1/4 cups sugar
3/4 cup natural unsweetened cocoa powder
1 teaspoon vanilla extract
2 large eggs, chilled
1/3 cup plus 1 tablespoon unbleached all purpose flour
1 cup walnut pieces

Position rack in bottom third of oven; preheat to 325°F. Line 8x8x2-inch metal baking pan with foil, pressing foil firmly against pan sides and leaving 2-inch overhang. Coat foil with nonstick spray. Melt butter in medium saucepan over medium heat. Continue cooking until butter stops foaming and browned bits form at bottom of pan, stirring often, about 5 minutes. Remove from heat; immediately add sugar, cocoa, 2 teaspoons water, vanilla, and 1/4 teaspoon (generous) salt. Stir to blend. Let cool 5 minutes (mixture will still be hot). Add eggs to hot mixture 1 at a time, beating vigorously to blend after each addition. When mixture looks thick and shiny, add flour and stir until blended. Beat vigorously 60 strokes. Stir in nuts. Transfer batter to prepared pan.

Bake brownies until toothpick inserted into center comes out almost clean (with a few moist crumbs attached), about 25 minutes. Cool in pan on rack. Using foil overhang, lift brownies from pan.
You won't reget one bite. I promise.




Good thing I ate hills for breakfast this morning, because I am making another batch of these sinfully delicious babies tonight.
